Instructions
- Brine the chicken breasts in a bowl of water with sea salt for 10 minutes.
- Preheat the oven to 450°F (232°C).
- Season both sides of the chicken breasts with salt and pepper.
- Mix goat cheese, sun-dried tomatoes, minced garlic, and fresh thyme in a small bowl.
- Cut a slit horizontally in each chicken breast to form a pocket and stuff with the goat cheese mixture.
- Lay out slices of prosciutto, place a stuffed chicken breast upside down on top, and wrap it securely.
- Place the wrapped chicken in a baking dish with prosciutto ends tucked underneath.
- Wrap remaining chicken pieces and bake for 18-20 minutes until cooked through.
- Let the chicken rest for 5 minutes before slicing.
