Ingredients

The chicken

  • 4 medium Boneless skinless chicken breasts
  • 2 tbsp Sea salt

The seasoning

  • ½ tsp Sea salt
  • ¼ tsp Black pepper

The filling

  • 4 oz Goat cheese (crumbled)
  • ¼ cup Sun-dried tomatoes (chopped)
  • 1 tbsp Fresh thyme
  • 2 cloves Garlic (minced)

The wrap

  • 12 slices Prosciutto

Instructions

  1. Brine the chicken breasts in a bowl of water with sea salt for 10 minutes.
  2. Preheat the oven to 450°F (232°C).
  3. Season both sides of the chicken breasts with salt and pepper.
  4. Mix goat cheese, sun-dried tomatoes, minced garlic, and fresh thyme in a small bowl.
  5. Cut a slit horizontally in each chicken breast to form a pocket and stuff with the goat cheese mixture.
  6. Lay out slices of prosciutto, place a stuffed chicken breast upside down on top, and wrap it securely.
  7. Place the wrapped chicken in a baking dish with prosciutto ends tucked underneath.
  8. Wrap remaining chicken pieces and bake for 18-20 minutes until cooked through.
  9. Let the chicken rest for 5 minutes before slicing.
