Ingredients

The base

  • 2 ¼ cups 1% milk
  • ½ cup sugar
  • 2 tbsp sugar
  • 1 cup pumpkin puree
  • 2 tsp pure vanilla extract

The spices

  • ½ tsp cinnamon
  • ¼ tsp nutmeg
  • pinch clove
  • pinch salt

Instructions

  1. Combine milk, sugar, and pumpkin in a saucepan and heat over medium heat.
  2. Bring to a boil while whisking, then reduce heat and simmer for 30 seconds.
  3. Remove from heat and stir in vanilla, nutmeg, cinnamon, and clove.
  4. Transfer the mixture to a bowl and chill in the refrigerator for about an hour.
  5. Once chilled, freeze in an ice cream maker according to the manufacturer's instructions.
