Tandoori Chicken

Ingredients

The chicken

  • 4 medium Chicken leg quarters

The marinade

  • 1 cup Full-fat Greek yogurt
  • 1 tbsp Lime juice
  • 1 clove Garlic (minced)
  • 1 tbsp Garam masala
  • 1 tsp Turmeric
  • ½ tsp Ground ginger
  • ½ tsp Cayenne pepper
  • 1 pinch Sea salt
  • 1 pinch Black pepper

For frying

  • 2 tbsp Olive oil

Instructions

  1. Mix the marinade ingredients in a large bowl until combined.
  2. Add the chicken to the marinade and coat thoroughly. Cover and marinate in the refrigerator for 1-2 hours or overnight.
  3. Preheat the oven to 400°F (204°C).
  4. Heat olive oil in a cast iron skillet over medium heat until shimmering. Add the chicken and cook for about 5 minutes on each side until browned.
  5. Transfer the skillet to the oven and bake for 25-35 minutes until the chicken is cooked through, aiming for an internal temperature of 170°F for dark meat.
