Instructions
- Mix the marinade ingredients in a large bowl until combined.
- Add the chicken to the marinade and coat thoroughly. Cover and marinate in the refrigerator for 1-2 hours or overnight.
- Preheat the oven to 400°F (204°C).
- Heat olive oil in a cast iron skillet over medium heat until shimmering. Add the chicken and cook for about 5 minutes on each side until browned.
- Transfer the skillet to the oven and bake for 25-35 minutes until the chicken is cooked through, aiming for an internal temperature of 170°F for dark meat.
