The chicken
Instructions
- Prepare the marinade by mixing yogurt, spices, minced ginger, garlic, and olive oil in a bowl.
- Pat dry the chicken and add it to the marinade, ensuring it is well coated. Cover and marinate for up to 24 hours or at least 10 minutes if short on time.
- Preheat the oven to 200C/400F. Line wire racks with tin foil.
- Remove chicken from the marinade, shaking off excess, and place on the wire rack.
- Bake for 20-25 minutes until the chicken is charred and cooked through. Let it rest for 5 minutes before serving.
