Instructions
- Dice the onion and mince the garlic. Peel and dice the sweet potato and slice the carrots.
- Add the onion, garlic, sweet potato, carrots, lentils, curry powder, cloves, diced tomatoes, tomato sauce, and vegetable broth to the slow cooker. Stir to combine.
- Cover and cook on high for 4 hours or low for 7-8 hours until lentils are tender and liquid is mostly absorbed.
- Stir in the coconut milk and adjust seasoning as needed.
- To serve, place 1 cup of cooked rice in a bowl, top with 1 cup of lentil mixture, and garnish with red onion and cilantro.
