Simple Stuffed Mushrooms

Ingredients

The filling

  • 1 cup sun-dried tomatoes in oil, drained and chopped
  • 1 ⅓ cups pitted black olives, chopped
  • 1 large egg, beaten
  • 3 cups grated mozzarella
  • small bunch flat-leaf parsley, chopped

The mushrooms

  • 12 large chestnut mushrooms, brushed clean

For seasoning

  • ¼ cup olive oil
  • to taste kosher salt
  • to taste black pepper

Instructions

  1. Preheat the oven to 200 degrees C/400 degrees F.
  2. In a mixing bowl, combine the sun-dried tomatoes, olives, egg, mozzarella, and seasoning.
  3. Remove the stems from the mushrooms and fill them with the mozzarella mixture.
  4. Place the stuffed mushrooms in a roasting dish and drizzle with olive oil.
  5. Bake for 30 minutes or until golden-brown and tender, then season with black pepper before serving.
