Instructions
- Preheat the oven to 375°F.
- Remove the stem and gills from the mushrooms using a spoon.
- Brush the mushrooms with balsamic vinegar.
- Heat olive oil in a small sauté pan, add onions and garlic, and cook until tender.
- Add the roasted yellow pepper and cook until tender.
- Stir in the tomatoes and spinach, cooking until the spinach is wilted.
- Stuff the mushrooms with the filling mixture.
- Sprinkle breadcrumbs and Italian seasoning on top, then add mozzarella cheese.
- Place on a baking sheet and bake for about ten minutes or until the cheese is melted.
- Serve and enjoy!
