Stuffed Portobello Mushrooms

Ingredients

The mushrooms

  • 2 pieces Portobello mushrooms
  • 1 tablespoon olive oil
  • 1 tablespoon balsamic vinegar

The filling

  • 2 cloves garlic, minced
  • ¼ pieces onion, chopped
  • 1 pieces yellow pepper, roasted and chopped
  • 2 pieces Roma tomatoes, chopped
  • 2 cups fresh spinach
  • ¼ cup breadcrumbs
  • to taste Italian seasoning
  • to taste Mozzarella cheese

Instructions

  1. Preheat the oven to 375°F.
  2. Remove the stem and gills from the mushrooms using a spoon.
  3. Brush the mushrooms with balsamic vinegar.
  4. Heat olive oil in a small sauté pan, add onions and garlic, and cook until tender.
  5. Add the roasted yellow pepper and cook until tender.
  6. Stir in the tomatoes and spinach, cooking until the spinach is wilted.
  7. Stuff the mushrooms with the filling mixture.
  8. Sprinkle breadcrumbs and Italian seasoning on top, then add mozzarella cheese.
  9. Place on a baking sheet and bake for about ten minutes or until the cheese is melted.
  10. Serve and enjoy!
