Ingredients

The mushrooms

  • 2 pieces portobello mushrooms

The filling

  • 1 cup spinach leaves
  • ½ cup prepared marinara sauce
  • 2 cups shredded mozzarella cheese
  • 1 tablespoon Italian seasoning
  • 8-10 pieces cherry tomatoes
  • 5-6 pieces olives
  • to taste none Parmesan cheese
  • to taste none basil for garnish

Instructions

  1. Preheat the oven to 400°F.
  2. Place the portobello mushrooms on a baking sheet with the stem side up.
  3. Fill each mushroom with half of the spinach leaves, ¼ cup of marinara sauce, and 1 cup of shredded cheese.
  4. Sprinkle half of the Italian seasoning, cherry tomatoes, and olives on top.
  5. Bake for 15 minutes.
  6. Remove from the oven and garnish with Parmesan cheese, basil, and additional marinara sauce if desired.
