Baked Tofu Power Bowl with Earth Goddess Dressing

Ingredients

The bowl

  • 2 small yams, cubed
  • ½ small cauliflower, chopped into florets
  • 1 tbsp avocado oil
  • 1 block firm tofu, cut into ¾ inch pieces
  • 2 cups cooked quinoa
  • 1 cup fresh cilantro, roughly chopped
  • cup toasted cashew nuts, rough chop
  • 1 tsp sea salt
  • ½ tsp fresh cracked black pepper

The dressing

  • 7 tbsp Plant Goddess Dressing
  • 1 serving Lemon Garlic Dressing to serve

Instructions

  1. Preheat the oven to 400°F and line two baking sheets with parchment paper.
  2. Prepare quinoa as instructed on the package and set to cool.
  3. On one baking sheet, add cubed yams and pour over 3 tbsp. of Plant Goddess Dressing, then bake for 35 minutes, flipping occasionally.
  4. On the second baking sheet, add cauliflower drizzled with avocado oil and use 1/4 of the pan for this.
  5. In the remaining 3/4 of the pan, add tofu that has been submerged in 4 tbsp. of Plant Goddess Dressing, and bake for 35 minutes, flipping halfway through.
  6. Once everything is cooked, combine all ingredients in a large serving tray or bowl, and top with cilantro, cashews, and additional dressing as desired.
