Baked Tofu Power Bowl with Earth Goddess Dressing

Instructions
- Preheat the oven to 400°F and line two baking sheets with parchment paper.
- Prepare quinoa as instructed on the package and set to cool.
- On one baking sheet, add cubed yams and pour over 3 tbsp. of Plant Goddess Dressing, then bake for 35 minutes, flipping occasionally.
- On the second baking sheet, add cauliflower drizzled with avocado oil and use 1/4 of the pan for this.
- In the remaining 3/4 of the pan, add tofu that has been submerged in 4 tbsp. of Plant Goddess Dressing, and bake for 35 minutes, flipping halfway through.
- Once everything is cooked, combine all ingredients in a large serving tray or bowl, and top with cilantro, cashews, and additional dressing as desired.
