Kale Tofu Vegan Bowl

Ingredients

Marinated Tofu

  • tablespoons sesame seed oil
  • 2 tablespoons rice vinegar
  • 2 tablespoons reduced sodium soy sauce
  • ¼ teaspoon red chili pepper flakes
  • ½ teaspoon brown sugar
  • 1 large clove garlic, minced
  • 1 teaspoon fresh ginger, minced
  • 1 10-ounce package extra firm, high-protein tofu, cubed

Turmeric Hemp Hearts Topping

  • 2 cups high fiber, unsweetened cereal
  • ¼ cup hemp hearts
  • 1 inch piece fresh turmeric
  • 1 clove garlic, minced
  • 1 teaspoon smoked paprika
  • pinch black pepper
  • pinch kosher salt
  • tablespoons sesame oil

Salad

  • 1 pound kale, chopped
  • 1 medium red bell pepper, thinly sliced
  • 4 medium radishes, thinly sliced
  • 1 medium avocado, thinly sliced

Instructions

  1. Prepare the marinade by mixing sesame seed oil, rice vinegar, soy sauce, red chili pepper flakes, brown sugar, garlic, and ginger.
  2. Marinate the cubed tofu in the mixture for at least 1 hour, stirring every 15 minutes.
  3. While the tofu marinates, preheat the oven to 375°F and prepare the Turmeric Hemp Hearts Topping by mixing cereal, hemp seeds, turmeric, garlic, smoked paprika, black pepper, salt, and sesame oil.
  4. Spread the topping mixture on a baking sheet and bake for 10 minutes, then cool.
  5. Drain the marinated tofu and reserve the marinade.
  6. Massage the reserved marinade into the chopped kale and divide it among 4 bowls.
  7. Top each bowl with bell pepper slices, radish slices, avocado slices, and marinated tofu cubes.
  8. Garnish each bowl with the Turmeric Hemp Hearts Topping and serve immediately.
