Simple Pasta with Peas and Ham

Ingredients

The pasta

  • 1 pound whole-wheat noodles (egg pasta recommended)

The sauce

  • 1 tablespoon olive oil
  • 1 unit onion (chopped)
  • 8 ounces ham (cut into small dice)
  • 5 cloves garlic (minced)
  • ½ cup white wine
  • 1 cup chicken broth
  • ½ cup reserved starchy pasta cooking water
  • cups frozen peas
  • 1 cup Parmesan cheese (freshly grated)
  • ½ cup heavy cream
  • to taste salt and pepper
  • to taste extra Parmesan cheese (for serving)

Instructions

  1. Cook the pasta according to package directions and reserve ½ cup of cooking water.
  2. Heat olive oil in a large skillet over medium heat and cook the onion until softened.
  3. Stir in the ham and garlic and cook until fragrant.
  4. Add the white wine and reduce until almost evaporated.
  5. Pour in the chicken broth and reserved pasta water, bring to a boil, and simmer until thickened.
  6. Stir in the frozen peas, grated cheese, and heavy cream, and season with salt and pepper.
  7. Cook until heated through and serve garnished with extra Parmesan.
