Parmesan Linguini with Peas

Ingredients

The pasta

  • 8 oz dry wheat linguini
  • 1 cup peas, fresh or frozen

The sauce

  • 1 ½ tablespoons light butter
  • 2-3 tablespoons fresh lemon juice
  • ½ cup fat free half & half
  • ½ teaspoon salt
  • ½ teaspoon dried basil flakes
  • to taste freshly ground black pepper
  • 2 oz Parmesan cheese, freshly grated

Instructions

  1. 1. Boil water in a large pot and cook the linguini according to package instructions.
  2. 2. About 2 minutes before the pasta is done, add the peas to the boiling water.
  3. 3. Drain the pasta and peas together and set aside.
  4. 4. In a small saucepan, melt the butter and stir in the lemon juice.
  5. 5. Add the half & half, salt, pepper, and dried basil, along with most of the Parmesan, and stir to combine.
  6. 6. Cook the sauce over low-medium heat for a few minutes to heat through.
  7. 7. Combine the pasta and peas with the sauce in a serving dish and toss until coated.
  8. 8. Serve with reserved Parmesan sprinkled on top.
