Ingredients

The pasta

  • ¾ box whole grain pasta (such as linguine)

The sauce

  • 2 Tbsp extra virgin olive oil
  • 3 cloves garlic (minced)
  • 2-4 Tbsp all-purpose flour
  • ¾ cup 2% milk
  • 1 cup vegetable stock
  • 1 Tbsp pesto
  • ¼ tsp salt
  • ¼ tsp pepper
  • ½ cup freshly grated Parmesan cheese
  • 1 cup green peas

Instructions

  1. Cook the pasta according to package instructions.
  2. Heat a large saucepan over medium heat, then add olive oil and garlic, stirring to avoid burning.
  3. Reduce heat slightly and add flour, whisking to combine and cooking for about a minute.
  4. Add the vegetable stock and milk, using a spatula to mash the flour into the liquid.
  5. Stir in salt, pepper, pesto, and Parmesan cheese, cooking until it bubbles and thickens.
  6. Adjust the sauce thickness by adding more milk or flour as needed.
  7. Add the peas and stir, then mix in the drained pasta and combine well.
  8. Serve immediately with additional Parmesan on top.
