Ingredients

The salad

  • 3 large cooked chicken breasts
  • 1 cup diced celery
  • ½ cup diced red onion
  • ¾ cup sliced almonds
  • 1 cup parsley
  • ½ cup dill
  • 1 small bunch green onions

The dressing

  • cups 5% plain Greek yogurt
  • ½ cup mayonnaise
  • 2 tbsp dijon mustard
  • 3 cloves garlic
  • 2 tbsp lemon juice
  • 1 tbsp apple cider vinegar
  • 1 tsp salt
  • ½ tsp black pepper

Instructions

  1. Finely shred the chicken using a food processor or by hand.
  2. Combine the shredded chicken with diced celery, red onion, and sliced almonds in a bowl.
  3. In a food processor, blend the herbs with Greek yogurt, mayonnaise, dijon mustard, garlic, lemon juice, apple cider vinegar, salt, and pepper until smooth.
  4. Pour the dressing over the chicken mixture and stir until well combined.
  5. Serve with crackers, on bread, or enjoy as is.
