Ingredients

The Green Goddess Dressing

  • ½ Cup Greek Yogurt
  • 1 whole Avocado
  • ½ Cup Basil
  • ¼ Cup Dill
  • 4 pieces Green Onions
  • 3 Cloves Garlic
  • 1 whole Lemon (zested and juiced)
  • 2 Tablespoons Champagne Vinegar
  • ½ Teaspoon Kosher Salt
  • ½ Teaspoon Ground Black Pepper

The Salad

  • 1 whole Rotisserie Chicken (removed and shredded)
  • ½ whole Red Onion (finely diced)
  • 8 leaves Romaine Lettuce
  • to taste none Chives (for garnishing)

Instructions

  1. Prepare the dressing by blending all dressing ingredients until smooth.
  2. Set the dressing aside and shred the rotisserie chicken.
  3. In a bowl, combine the shredded chicken with chopped red onion.
  4. Pour the Green Goddess Dressing over the chicken and mix well.
  5. Serve the chicken mixture in romaine lettuce leaves and garnish with chives.
