Ingredients

The crust

  • ½ cup crushed graham cracker crumbs
  • 1 tbsp light butter, softened

The filling

  • 8 oz reduced fat cream cheese, softened
  • ¼ cup sugar
  • 6 oz fat-free vanilla Greek yogurt
  • 2 large egg whites
  • 2 tbsp lemon juice
  • ½ tsp vanilla extract
  • 1 tbsp all purpose flour
  • ¼ cup strawberry jam

For baking

  • as needed spray cooking spray

Instructions

  1. Preheat the oven to 350°F and coat an 8-inch square baking pan with cooking spray.
  2. Combine graham cracker crumbs and butter until moistened, then press into the bottom of the pan.
  3. Using an electric mixer, beat the cream cheese, sugar, and vanilla until smooth.
  4. Gradually mix in the Greek yogurt, egg whites, lemon juice, and flour without overbeating.
  5. Pour the filling over the crust and drop spoonfuls of strawberry jam on top.
  6. Gently swirl the jam through the filling to create a marble effect.
  7. Bake for 25 to 30 minutes until the center is almost set, then cool to room temperature.
  8. Chill in the refrigerator for a few hours before serving.
