Instructions
- Prepare the crust by mixing graham cracker crumbs, powdered sugar, melted butter, and cinnamon, then press into a pie pan and chill.
- Preheat the oven to 375°F and mix cream cheese, eggs, sugar, vanilla, and salt until well combined, then pour into the chilled crust and bake for about 20 minutes.
- Let the cheesecake cool for 30 minutes to 1 hour.
- Preheat the oven to 425°F, mix sour cream, sugar, vanilla, and salt, pour over the cooled cheesecake, and bake for 5 minutes.
- Cool at room temperature for 20 minutes, then refrigerate for 6 to 12 hours before serving.
- For the strawberry sauce, combine strawberries, sugar, water, lemon juice, and cornstarch in a saucepan, simmer until thickened, and chill before serving.
