Ingredients

Graham Cracker Crust

  • cups graham cracker crumbs
  • ¼ cup granulated sugar
  • 6 Tablespoons unsalted butter, melted

Filling

  • 16 ounces full-fat brick cream cheese, softened
  • ½ cup granulated sugar
  • ¼ cup full-fat sour cream
  • 1 teaspoon pure vanilla extract
  • 1 teaspoon fresh lemon juice
  • 2 large eggs

Optional Toppings

  • to taste raspberry dessert sauce
  • to taste fresh raspberries
  • to taste whipped cream

Instructions

  1. Preheat the oven to 350°F (177°C).
  2. Make the crust by mixing graham cracker crumbs and sugar, then adding melted butter and pressing into a pie dish.
  3. Bake the crust for 10 minutes.
  4. Prepare the filling by beating cream cheese and sugar until smooth, then adding sour cream, vanilla, and lemon juice.
  5. Add eggs one at a time, mixing until just blended.
  6. Lower the oven temperature to 325°F (163°C) and pour the filling into the warm crust.
  7. Bake for about 35 minutes until the center is almost set.
  8. Cool the pie for 1 hour at room temperature, then chill in the refrigerator for at least 2 hours before serving.
  9. Garnish with optional toppings if desired before serving.
