Instructions
- Preheat the oven to 350°F (177°C).
- Make the crust by mixing graham cracker crumbs and sugar, then adding melted butter and pressing into a pie dish.
- Bake the crust for 10 minutes.
- Prepare the filling by beating cream cheese and sugar until smooth, then adding sour cream, vanilla, and lemon juice.
- Add eggs one at a time, mixing until just blended.
- Lower the oven temperature to 325°F (163°C) and pour the filling into the warm crust.
- Bake for about 35 minutes until the center is almost set.
- Cool the pie for 1 hour at room temperature, then chill in the refrigerator for at least 2 hours before serving.
- Garnish with optional toppings if desired before serving.
