Instructions
- Preheat the oven to 350°F.
- In a mixing bowl, combine graham cracker crumbs and sugar, then stir in melted butter.
- Press the mixture into the bottom and halfway up the sides of a 9-inch springform pan.
- Bake the crust for 9 minutes and let it cool.
- Reduce the oven temperature to 325°F.
- Boil about 4 quarts of water for the water bath.
- In a large bowl, blend cream cheese and sugar until smooth.
- Add eggs two at a time, mixing until combined.
- Blend in sour cream, heavy cream, and vanilla until combined, tapping the bowl to release air bubbles.
- Wrap the springform pan with aluminum foil and spray the inside with non-stick spray.
- Pour the cheesecake filling over the crust and level it.
- Place the springform pan in a roasting pan and pour boiling water around it halfway up the sides.
- Bake for 1 hour 20 minutes to 1 hour 40 minutes until slightly wiggly in the center.
- Turn off the oven and let the cheesecake rest inside with the door ajar for 1 hour.
- Cool at room temperature for 1 hour, then refrigerate for 8 hours before serving.
