Ingredients

The crust

  • 9 pieces graham crackers
  • 5 tablespoons butter
  • 2 tablespoons granulated sugar

The filling

  • 4 8-ounce packages cream cheese
  • 2 tablespoons all-purpose flour
  • ¼ teaspoon salt
  • cups granulated sugar
  • ½ cup sour cream
  • 1 tablespoon vanilla extract
  • 3 large eggs

For serving

  • to taste whipped cream
  • to taste fresh berries

Instructions

  1. Preheat the oven to 325°F.
  2. Finely crush the graham crackers and mix with melted butter and sugar.
  3. Press the mixture into a 9-inch springform pan and bake for 15 to 20 minutes.
  4. Cool the crust and reduce the oven temperature to 300°F.
  5. Beat cream cheese, flour, and salt until smooth.
  6. Add sugar, sour cream, and vanilla, then mix in the eggs one at a time.
  7. Pour the filling into the crust and smooth the top.
  8. Bake for 60 to 75 minutes until set but slightly jiggly in the center.
  9. Cool to room temperature, then chill in the refrigerator overnight.
  10. Remove from the springform pan and slice before serving.
