Instructions
- Preheat the oven to 325°F and prepare a 9-inch square baking pan with a foil sling and non-stick spray.
- Crush the graham crackers into fine crumbs and mix with melted butter and sugar, then press into the bottom of the pan.
- Par-bake the crust for 10 minutes and let it cool.
- For the filling, beat cream cheese, sugar, and vanilla until blended, then add sour cream and mix well.
- Add eggs one at a time while mixing on low speed, then pour the mixture over the crust.
- Bake for 40 minutes until the center is set, then cool and chill for at least 4 hours.
- For the optional strawberry topping, combine sliced strawberries and sugar in a saucepan, boil, then simmer for 20 minutes and add vanilla.
- Serve the cheesecake bars chilled, optionally topped with the strawberry mixture.
