Vanilla Bean Cheesecake

Ingredients

The crust

  • 1 2/3 cup crushed graham cracker crumbs
  • 2 Tbsp granulated sugar
  • 6 Tbsp unsalted butter, melted

The cheesecake filling

  • 3 pkgs. cream cheese, softened
  • 1 cup granulated sugar
  • seeds of 2 vanilla beans
  • 3 large eggs
  • 3/4 cup sour cream
  • 1/3 cup heavy cream

The mousse layer

  • 7 oz white chocolate, roughly chopped
  • 1 1/2 cups heavy cream
  • 6 oz cream cheese, nearly at room temperature
  • 1 1/2 Tbsp granulated sugar
  • seeds of 1 vanilla bean

The whipped cream topping

  • 3/4 cup heavy cream
  • 1 1/2 Tbsp granulated sugar
  • seeds of 1/2 vanilla bean (optional)

Instructions

  1. Preheat the oven and prepare the springform pan with foil.
  2. Mix the graham cracker crust ingredients and press into the pan, then bake.
  3. Prepare the cheesecake filling and pour over the cooled crust, then bake and cool.
  4. Make the mousse layer by melting the white chocolate and whipping the cream, then combine and spread over the cheesecake.
  5. Prepare the whipped topping and spread it over the mousse layer before serving.
