Ingredients

The crust

  • ¾ cup graham cracker crumbs
  • 2 Tablespoons unsalted butter

The filling

  • 8 ounces light brick cream cheese
  • ¾ cup Greek yogurt
  • 2 large egg whites
  • ¼ cup granulated sugar
  • 2 Tablespoons all-purpose flour
  • 1 Tablespoon fresh lemon juice
  • 2 teaspoons pure vanilla extract
  • ¼ cup raspberry jam

Instructions

  1. Preheat the oven to 350°F (177°C) and prepare an 8-inch square baking pan with foil or parchment.
  2. Mix graham cracker crumbs and melted butter, then press the mixture into the baking pan and bake for 8 minutes.
  3. In a large bowl, beat the cream cheese until smooth, then add yogurt and mix until combined.
  4. Add egg whites, sugar, flour, lemon juice, and vanilla, mixing until smooth.
  5. Pour the filling over the crust and swirl raspberry jam on top.
  6. Bake for 25 minutes, covering with foil after 20 minutes to prevent browning. Allow to cool for 30 minutes at room temperature.
  7. Chill in the refrigerator for 3-4 hours or overnight before cutting into squares.
