30-Minute Beef and Quinoa Meatballs

Ingredients

  • 1 pound ground beef
  • ¾ cup cooked quinoa
  • ¾ cup gluten free breadcrumbs
  • 1 medium red onion, chopped fine
  • 3 cloves garlic, minced
  • 2 large eggs
  • ½ cup grated parmesan cheese
  • 2 tablespoons fresh parsley (or 2 teaspoons dried)
  • 1 teaspoon smoked paprika
  • ¼ teaspoon cayenne pepper
  • 1 teaspoon black pepper
  • 1 teaspoon sea salt

Instructions

  1. Preheat the oven to 420°F and line a baking sheet with parchment paper.
  2. In a large bowl, combine ground beef, cooked quinoa, gluten free breadcrumbs, chopped red onion, minced garlic, eggs, grated parmesan cheese, parsley, smoked paprika, cayenne pepper, black pepper, and sea salt.
  3. Shape the mixture into meatballs and place them on the prepared baking sheet.
  4. Bake in the oven for about 15 to 18 minutes, or until browned and crispy.
