Ingredients

The meatballs

  • 1 lb ground chicken
  • ¼ cup nutritional yeast
  • ¼ cup hot sauce
  • 2 tbsp mayo
  • 2 pieces green onions, sliced (for topping)

For the ranch sauce (optional)

  • tsp dried parsley
  • tsp dried chives
  • 1 tsp dill weed
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp onion flakes
  • ¼ tsp ground pepper
  • cup mayo
  • ¼ cup water

Instructions

  1. Preheat the oven to 400°F and line a sheet pan with parchment paper.
  2. In a bowl, combine the ground chicken, nutritional yeast, hot sauce, mayo, and salt, mixing until incorporated.
  3. Form the mixture into small balls, about the size of a heaping tablespoon, yielding approximately 12-15 meatballs.
  4. Place the meatballs on the sheet pan and bake for 20 minutes.
  5. For extra browning, switch the oven to broil and move the pan to the top rack for 3-4 minutes.
  6. While the meatballs bake, prepare the ranch dressing by whisking together all ranch sauce ingredients in a small bowl and refrigerate.
  7. Once the meatballs are done, remove them from the oven and sprinkle with sliced green onions.
  8. Serve with ranch dressing drizzled on top or on the side for dipping.
