Instructions
- Preheat the oven to 400°F (204°C) and line a baking sheet with parchment paper.
- In a bowl, mix the ground chicken, egg whites, blue cheese, green onions, and ¾ of the buffalo sauce until just combined.
- Form the mixture into 1-inch balls and place them on the lined baking sheet.
- Bake the meatballs for 12-15 minutes until they are barely done.
- In the meantime, whisk together the remaining buffalo sauce with olive oil.
- Drain any fluid released by the meatballs, drizzle the buffalo sauce mixture over them, and bake for an additional 2-3 minutes.
