Ingredients

The meatballs

  • lb Ground chicken
  • ¼ cup Egg whites
  • ½ cup Blue cheese
  • ½ cup Green onions
  • ½ cup Buffalo sauce

The sauce

  • 1 tbsp Olive oil

Instructions

  1. Preheat the oven to 400°F (204°C) and line a baking sheet with parchment paper.
  2. In a bowl, mix the ground chicken, egg whites, blue cheese, green onions, and ¾ of the buffalo sauce until just combined.
  3. Form the mixture into 1-inch balls and place them on the lined baking sheet.
  4. Bake the meatballs for 12-15 minutes until they are barely done.
  5. In the meantime, whisk together the remaining buffalo sauce with olive oil.
  6. Drain any fluid released by the meatballs, drizzle the buffalo sauce mixture over them, and bake for an additional 2-3 minutes.
