Ingredients

The meatballs

  • 1 pound lean ground chicken
  • 1 large egg
  • ½ cup panko breadcrumbs
  • ¼ cup finely diced cilantro
  • 3 tablespoons buffalo sauce
  • 1 medium carrot, finely shredded
  • 2 tablespoons finely diced green onion
  • 2 cloves garlic, minced
  • ¼ teaspoon salt
  • to taste freshly ground black pepper

For tossing

  • cup buffalo sauce

For garnish

  • to taste diced green onion
  • to taste diced cilantro

For serving

  • ½ batch bleu cheese yogurt dip

Instructions

  1. Make the bleu cheese yogurt dip and store it in the fridge until ready to serve.
  2. Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
  3. In a large bowl, combine ground chicken, egg, breadcrumbs, cilantro, buffalo sauce, shredded carrot, green onion, garlic, salt, and pepper. Mix until well combined.
  4. Form the mixture into about 20 meatballs and place them on the prepared baking sheet.
  5. Bake for 12-15 minutes or until a meat thermometer reads 165°F (74°C).
  6. Toss the cooked meatballs in ⅓ cup of buffalo sauce until well coated.
  7. Serve immediately, garnished with green onion and cilantro, alongside the bleu cheese yogurt dip.
