Ingredients

Homemade Ranch

  • ½ cup plain Greek yogurt
  • ½ cup buttermilk
  • 1 tablespoon mayonnaise

  • 1 teaspoon dried chives
  • 1 teaspoon dried dill
  • 1 teaspoon onion powder
  • 1 teaspoon garlic powder
  • ½ teaspoon granulated sugar
  • 1 teaspoon kosher salt
  • ½ teaspoon ground black pepper
  • ½ tablespoon lemon zest
  • 1 teaspoon white wine vinegar

Buffalo Sauce

  • ¼ cup melted salted butter
  • ½ cup Frank’s hot sauce
  • 2 tablespoons honey

Meatballs

  • 1 lb ground chicken
  • 4 tablespoons salted butter, cold and grated
  • ½ cup breadcrumbs
  • 1 large egg
  • 2 teaspoons garlic powder
  • 1 teaspoon dried thyme
  • 1 teaspoon dried parsley
  • 1 tablespoon dried chives
  • 1 teaspoon kosher salt
  • ½ teaspoon ground black pepper
  • 3 tablespoons olive oil

Instructions

  1. Prepare the ranch dressing by whisking together Greek yogurt, buttermilk, and mayonnaise, then adding the remaining ranch ingredients.
  2. Melt the butter in a saucepan and whisk in the buffalo sauce and honey until smooth.
  3. Combine all meatball ingredients in a large bowl and mix with your hands, then form into balls using a tablespoon scoop.
  4. Heat olive oil in a skillet over medium-high heat and brown the meatballs for 2-3 minutes on each side until they reach an internal temperature of 165ºF.
  5. Remove excess oil from the pan, return the meatballs, and add the buffalo sauce, simmering until heated through.
  6. Serve with the homemade ranch or blue cheese.
