Ingredients

Chicken Meatballs

  • 2 pounds ground chicken
  • 2 cups shredded zucchini
  • 2 cloves garlic, minced
  • ¼ cup hot sauce
  • 1 teaspoon salt
  • as needed oil avocado oil or refined coconut oil for frying

Buffalo Sauce

  • 1 cup hot sauce (like Frank’s Red Hot)
  • ¼ cup ghee or butter
  • 1 teaspoon garlic powder
  • ½ cup coconut cream or half and half
  • ¼ teaspoon salt

Instructions

  1. Mix all meatball ingredients in a large bowl until well combined, being careful not to overmix.
  2. Use a disher or spoons to portion out and roll the mixture into uniform balls.
  3. Heat a skillet over medium heat and add oil to coat the bottom.
  4. Cook the meatballs in a single layer until browned, then turn to brown all sides.
  5. Transfer cooked meatballs to a plate and repeat with remaining mixture.
  6. Wipe the skillet clean, return to heat, and whisk together all sauce ingredients until smooth.
  7. Cook the sauce until bubbly, then reduce heat and add the meatballs, cooking until thickened.
  8. Serve drizzled with ranch dressing and alongside celery sticks and blue cheese.
