Healthy Buffalo Chicken Meatballs

Instructions
- Preheat the oven to 375°F.
- Sauté oil, celery, carrots, onion, and garlic in a skillet until onions are translucent; let cool slightly.
- Combine chicken, almond flour, 2 tbsp buffalo sauce, and sautéed veggies in a bowl.
- Form the mixture into 16-20 meatballs and place on a baking sheet.
- Bake for 14-18 minutes until cooked through, flipping halfway.
- Optionally, broil to brown the meatballs.
- Return meatballs to the skillet, add remaining buffalo sauce, and toss gently; simmer for 2-3 minutes.
- Serve on spaghetti squash or zucchini noodles, drizzled with ranch and garnished with green onions.
