Ingredients

The meatballs

  • 2 tsp olive oil or avocado oil
  • ¼ cup minced carrots
  • ¼ cup minced celery
  • ¼ cup minced yellow onion
  • 3 cloves garlic
  • 1 lb ground chicken or turkey
  • ¼ cup almond flour or flour of choice
  • ¾ cup buffalo sauce

For serving

  • Ranch dressing
  • Green onions and/or cilantro (optional)

Instructions

  1. Preheat the oven to 375°F.
  2. Sauté oil, celery, carrots, onion, and garlic in a skillet until onions are translucent; let cool slightly.
  3. Combine chicken, almond flour, 2 tbsp buffalo sauce, and sautéed veggies in a bowl.
  4. Form the mixture into 16-20 meatballs and place on a baking sheet.
  5. Bake for 14-18 minutes until cooked through, flipping halfway.
  6. Optionally, broil to brown the meatballs.
  7. Return meatballs to the skillet, add remaining buffalo sauce, and toss gently; simmer for 2-3 minutes.
  8. Serve on spaghetti squash or zucchini noodles, drizzled with ranch and garnished with green onions.
