Ingredients

The meatballs

  • 1 pound ground chicken
  • ¾ cup whole wheat Panko bread crumbs
  • 1 large egg
  • 1 teaspoon kosher salt
  • ¾ teaspoon garlic powder
  • ¼ teaspoon ground black pepper
  • 2 green onions finely chopped (about ¼ cup)

The sauce and toppings

  • ¾ cup buffalo sauce
  • to taste crumbled blue cheese or feta cheese (optional for serving)

Instructions

  1. Preheat the oven to 400°F and prepare a baking sheet.
  2. In a mixing bowl, combine ground chicken, Panko, egg, salt, garlic powder, black pepper, and chopped green onion, mixing gently.
  3. Form the mixture into 1½-inch meatballs and place them on the baking sheet.
  4. Bake the meatballs for 4 minutes, flip them, and then bake for an additional 2 minutes.
  5. Transfer the baked meatballs to a slow cooker and pour buffalo sauce over them, stirring gently to coat.
  6. Cover and cook on low for 2 hours until the meatballs are tender.
  7. Serve hot, garnished with additional green onion and cheese if desired.
