Ingredients

The meatballs

  • 1 lb ground chicken
  • ½ cup buffalo sauce, divided
  • 1 large egg
  • cup almond flour or breadcrumbs
  • 2 cloves garlic, minced
  • ¼ cup green onions, chopped
  • ½ teaspoon onion powder
  • ½ teaspoon salt
  • ¼ teaspoon black pepper

Garnish

  • to taste green onions
  • to taste blue cheese crumbles

Instructions

  1. Preheat the oven to 400 degrees F.
  2. In a large bowl, mix together ground chicken, egg, almond flour (or breadcrumbs), 3 tablespoons buffalo sauce, garlic, green onions, onion powder, salt, and pepper until combined.
  3. Using a small cookie scoop, roll the mixture into 1-inch meatballs and place them on a lined baking sheet.
  4. Bake the meatballs for 18 to 20 minutes until browned and cooked through, reaching an internal temperature of 165 degrees F.
  5. Remove from the oven, toss with remaining buffalo sauce, and serve with green onions and your favorite dipping sauce.
