Instructions
- Preheat the oven to 400°F.
- Line a baking sheet with parchment paper or spray it with cooking spray.
- In a large bowl, combine the ground chicken, crushed tortilla chips, egg, ¼ cup of buffalo sauce, grated carrot, grated celery, minced green onions, paprika, salt, and pepper. Mix well using your hands.
- Form the mixture into meatballs using a spoon or small cookie scoop and place them on the baking sheet.
- Bake for 18-20 minutes until the chicken is cooked through.
- Transfer the cooked meatballs to a bowl and toss with the remaining ¼ cup of buffalo sauce.
- Sprinkle with extra green onion if desired, serve with toothpicks and ranch dressing on the side.
