Ingredients

The meatballs

  • 1 ½ pounds Ground Chicken
  • ½ cup Tortilla Chips
  • 1 large Egg
  • 1 medium Carrot
  • 1 stalk Celery
  • 3 stalks Green Onions
  • 4 cloves Garlic
  • ½ teaspoon Paprika
  • ¾ teaspoon Sea Salt
  • ½ teaspoon Black Pepper
  • ½ cup Buffalo Sauce

Optional

  • ¾ cup Ranch Dressing

Instructions

  1. Preheat the oven to 400°F.
  2. Line a baking sheet with parchment paper or spray it with cooking spray.
  3. In a large bowl, combine the ground chicken, crushed tortilla chips, egg, ¼ cup of buffalo sauce, grated carrot, grated celery, minced green onions, paprika, salt, and pepper. Mix well using your hands.
  4. Form the mixture into meatballs using a spoon or small cookie scoop and place them on the baking sheet.
  5. Bake for 18-20 minutes until the chicken is cooked through.
  6. Transfer the cooked meatballs to a bowl and toss with the remaining ¼ cup of buffalo sauce.
  7. Sprinkle with extra green onion if desired, serve with toothpicks and ranch dressing on the side.
