Ingredients

Buffalo Chicken Meatballs

  • 1 lb ground chicken
  • 1 large egg
  • 1 cup almond flour
  • cup hot sauce
  • ½ cup hot sauce
  • ¼ cup chopped green onion
  • 1 tsp garlic powder

Blue Cheese Dip

  • ½ cup crumbled blue cheese
  • ¼ cup almond milk
  • ½ cup Greek yogurt
  • 1 tbsp white or red wine vinegar
  • 2 tsp garlic powder
  • ½ tsp salt

Instructions

  1. Preheat the oven to 400°F and line a baking sheet with parchment paper.
  2. In a large bowl, mix together the ground chicken, egg, almond flour, ⅓ cup hot sauce, green onion, and garlic powder.
  3. Roll about 2 tablespoons of the mixture into balls and place them on the baking sheet.
  4. Bake for 18 minutes at 400°F.
  5. Remove from the oven and let rest for 10 minutes.
  6. Toss the meatballs in ½ cup of hot sauce.
  7. For the blue cheese dip, whisk all the ingredients together in a bowl.
  8. Serve the blue cheese dip alongside the meatballs or drizzled on top.
