Ingredients

  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 tablespoon paprika
  • teaspoon garlic powder
  • teaspoon fennel seed
  • ¼ teaspoon crushed red pepper flakes
  • 1 pound uncooked 99% fat free ground turkey breast
  • 2 teaspoons olive oil
  • ¼ cup finely chopped onion
  • 1 clove garlic, minced
  • 8 oz 1/3 less fat cream cheese, softened
  • ¼ cup grated parmesan cheese
  • cup seasoned bread crumbs
  • 1 tablespoon dried basil
  • 1 ½ teaspoons dried parsley
  • 30 pieces fresh white mushrooms, stems removed
  • 3 tablespoons light butter, melted

Instructions

  1. Mix the salt, pepper, paprika, garlic powder, fennel seed, and red pepper flakes to create a seasoning mix.
  2. Combine the seasoning mix with the ground turkey in a bowl and mix well. Refrigerate for a couple of hours if possible.
  3. Preheat the oven to 400°F and prepare a baking sheet with aluminum foil and cooking spray.
  4. Heat olive oil in a skillet over medium heat, then add the seasoned turkey, onions, and garlic, cooking until the meat is browned and onions are softened.
  5. Stir in the cream cheese and parmesan until melted, then add the bread crumbs, basil, and parsley.
  6. Brush the mushroom caps with melted butter and fill them with the turkey mixture.
  7. Bake the stuffed mushrooms in the oven for 12-15 minutes.
