Ingredients

The mushrooms

  • 1 lb Cremini mushrooms

The filling

  • 5 slices Bacon
  • 4 cloves Garlic (minced)
  • ¾ lb Ground Italian sausage
  • 4 oz Cream cheese
  • 2 tbsp Fresh parsley
  • ½ cup Mozzarella cheese (shredded, divided)
  • ¼ cup Grated parmesan cheese

Instructions

  1. Preheat the oven to 400°F and line a sheet pan with parchment paper or foil.
  2. Place the mushroom caps on the sheet pan, open side up, and set aside.
  3. Cook bacon in a skillet over medium heat until crispy, then remove and set aside, leaving grease in the skillet.
  4. Sauté minced garlic in the skillet until fragrant.
  5. Add ground sausage to the skillet and cook until browned, then drain excess grease.
  6. Stir in cream cheese, parsley, ¼ cup mozzarella, and ¼ cup parmesan until smooth.
  7. Chop or crumble the cooked bacon and mix it into the sausage mixture.
  8. Spoon the filling into the mushroom caps, filling them generously.
  9. Top with the remaining mozzarella, pressing it into the filling.
  10. Bake for 10 minutes until cheese is golden, then cover with foil and bake for another 10 minutes until mushrooms are soft.
