Ingredients

The mushrooms

  • 8 medium portobello mushrooms
  • ½ tablespoon olive oil

The filling

  • 1 cup keto pizza sauce
  • ¼ cup black olives, sliced
  • ¼ cup pepperoni, chopped
  • 1 cup shredded cheese (mozzarella, cheddar, or a mix)
  • 1 tablespoon Italian seasoning

Instructions

  1. Preheat the oven to 200C/400F and line a baking sheet with parchment paper.
  2. Remove the stems from the mushrooms and clean them with a damp paper towel. Brush olive oil over the mushrooms and place them head-side down on the baking sheet.
  3. Fill each mushroom cap with pizza sauce, followed by olives and chopped pepperoni. Bake in the oven for 15 minutes.
  4. Remove from the oven, add cheese on top of each mushroom, and bake for an additional 10 minutes until the cheese has melted. Serve immediately.
