Ingredients

The mushrooms

  • 2 large portobello mushroom caps
  • 1 tablespoon olive oil
  • 2 tablespoons Italian salad dressing

The filling

  • 1 cup pulled pork
  • 1 cup shredded cheddar cheese
  • ¼ cup sugar-free BBQ sauce
  • ½ cup keto coleslaw

Instructions

  1. Preheat the oven to 400°F and line a small rimmed sheet pan with parchment or foil.
  2. Warm the pulled pork and mix it with BBQ sauce and cheese, adding more sauce if needed.
  3. Remove the stem and scrape out the gills from the mushroom caps.
  4. Rub the outside of the mushroom caps with olive oil or Italian dressing and season the inside with salt and pepper.
  5. Stuff each mushroom with half of the pulled pork mixture and place them on the pan.
  6. Bake for 30-40 minutes until the mushrooms are cooked through.
  7. Top each stuffed mushroom with coleslaw before serving.
