Ingredients

The filling

  • 1 pound chorizo
  • 8 oz cream cheese, softened
  • ¼ cup chopped green onion
  • 2 tablespoon minced cilantro

The mushrooms

  • 1 ½ pound stuffing mushrooms

Instructions

  1. Preheat the oven to 350°F.
  2. Cook the chorizo in a skillet and let it cool.
  3. In a bowl, mix the softened cream cheese, green onions, and cilantro.
  4. Add the cooled chorizo to the mixture, leaving the grease behind.
  5. Wash the mushroom caps, dry them, and remove the stems.
  6. If necessary, scoop out some of the middle of the mushrooms.
  7. Place the mushroom caps on a baking sheet and stuff them with the chorizo mixture.
  8. Add water to the bottom of the baking sheet to cover it.
  9. Bake the mushrooms for 20-30 minutes until browned.
  10. Broil for an additional 30-60 seconds for extra browning if desired.
  11. Carefully transfer the mushrooms to a serving platter and serve hot.
