Pulled Pork Stuffed Mushrooms

sugar-free BBQ sauce

keto coleslaw
Instructions
- Preheat the oven to 400°F and prepare a small rimmed sheet pan with parchment or foil.
- Warm the pulled pork and mix it with BBQ sauce and cheese, adding more sauce if needed.
- Remove the stems and scrape out the gills from the mushroom caps.
- Rub the outside of the mushroom caps with olive oil or Italian dressing and season the insides with salt and pepper.
- Stuff each mushroom with half of the pulled pork mixture and place them on the prepared pan.
- Bake for 30-40 minutes until the mushrooms are cooked through.
- Top each stuffed mushroom with coleslaw before serving.
