Roasted Salmon with Citrus Salsa Verde

Ingredients

The salmon

  • 1 lb salmon fillet, preferably wild
  • Kosher salt

The citrus salsa verde

  • 1 small shallot, very thinly sliced into rings
  • 1 Tbsp extra-virgin olive oil
  • ½ cup extra-virgin olive oil
  • ½ cup chopped cilantro
  • ½ cup chopped parsley
  • 1 small clove garlic, finely grated
  • ½ tsp smoked paprika
  • finely grated zest from 1 orange
  • finely grated zest from 1 lemon
  • fresh juice from 1 orange
  • fresh juice from 1 lemon

Instructions

  1. Preheat the oven to 250°F.
  2. Combine shallot, half of the orange zest, half of the lemon zest, and 1 Tbsp of oil in a small baking dish.
  3. Season the salmon with salt and coat it with the zest mixture.
  4. Bake the salmon until it is just opaque in the center and flakes with a fork, about 30–35 minutes.
  5. Meanwhile, mix cilantro, parsley, garlic, paprika, remaining zests, and ½ cup of oil in a medium bowl.
  6. Stir in orange and lemon juice and season the salsa verde with salt just before serving over the fish.
