Sheet Pan Citrus Salmon with Roasted Vegetables

Ingredients

  • 12 ounce salmon fillet
  • 1 each yellow or orange bell pepper
  • 3 cups broccoli florets
  • ½ each red onion (large), sliced
  • 2 Tablespoons extra virgin olive oil
  • ½ cup coconut aminos (or soy sauce)
  • cup orange juice
  • 1 Tablespoon minced garlic
  • to taste salt
  • to taste pepper

Instructions

  1. Preheat the oven to 375°F and line a baking sheet with parchment paper.
  2. In a small bowl, whisk together coconut aminos (or soy sauce), orange juice, and garlic, then pour over the salmon and refrigerate to marinate for 30 minutes.
  3. Place broccoli, bell pepper, and red onion on the sheet pan and drizzle with olive oil.
  4. Remove the salmon from the marinade and place it on the sheet pan with the vegetables, then sprinkle everything with salt and pepper.
  5. Bake in the oven for 30 minutes or until the salmon is fully cooked.
  6. Divide the dish between plates and enjoy.
