Rosemary Citrus One Pan Baked Salmon

Ingredients

The marinade

  • cup olive oil
  • 2 tablespoons orange juice
  • 1 tablespoon lemon juice
  • ½ teaspoon garlic, minced
  • ¼ teaspoon orange zest
  • 2 tablespoons fresh rosemary
  • 2–3 teaspoons honey

The salmon and vegetables

  • 10–12 ounces sockeye salmon
  • 1 small orange (for slices)
  • 2 cups chopped/sliced veggies of choice
  • pinch sea salt
  • to taste additional seasoning or salt and pepper

Instructions

  1. Whisk together the marinade ingredients and set aside.
  2. Grease a large baking dish and place the salmon skin side down, seasoning with salt.
  3. Brush the marinade on top of the salmon and refrigerate for 5-10 minutes while preheating the oven to 400°F.
  4. After marinating, add orange slices on top of the salmon and toss veggies with the reserved marinade.
  5. Place the veggies around the salmon in the baking dish.
  6. Bake in the oven for 12-15 minutes until the salmon is cooked through and the veggies are tender.
  7. Let the salmon rest for 3 minutes before serving and adjust seasoning to taste.
