Orange Glazed Salmon

Ingredients

The salmon

  • 4 pieces skinless salmon fillets (6 oz each, 1-inch thick)
  • 2 tsp olive oil
  • Salt to taste
  • Black pepper to taste

The sauce

  • 2 cloves garlic (minced)
  • 2 ½ tsp minced fresh rosemary
  • 5 Tbsp chicken broth (divided)
  • 1 ½ tsp orange zest
  • cup fresh orange juice
  • 1 Tbsp fresh lemon juice
  • 1 ½ Tbsp honey
  • 2 ½ tsp cornstarch

Instructions

  1. Heat olive oil in a large non-stick sauté pan over medium-high heat.
  2. Season both sides of the salmon with salt and pepper, then add to the pan and cook for about 3-4 minutes per side until browned and cooked through.
  3. Transfer the salmon to a plate while keeping the oil in the pan.
  4. Add minced garlic and rosemary to the pan and sauté for 20 seconds.
  5. Pour in ¼ cup of chicken broth and simmer until mostly reduced.
  6. Stir in the orange zest, orange juice, lemon juice, and honey.
  7. In a small bowl, whisk together the remaining 1 Tbsp of chicken broth with cornstarch, then pour it into the pan.
  8. Season the sauce with salt and pepper to taste, bring to a boil, and let it boil for 1 minute while stirring constantly.
  9. Return the salmon to the pan and spoon the sauce over it.
