Orange Honey Glazed Salmon

Ingredients

The glaze

  • ¾ cup orange juice
  • ½ lemon juice
  • 1 tablespoon olive oil
  • 1 tablespoon honey
  • ¼ cup broth
  • 2 teaspoons corn starch
  • 2 teaspoons fresh thyme
  • ½ teaspoon cumin
  • ½ teaspoon paprika
  • ½ teaspoon cayenne pepper

The salmon

  • 4 fillets salmon
  • 1 teaspoon minced garlic
  • ¼ cup small onion, diced
  • Creole Seasoning to taste or salt and freshly ground black pepper

Instructions

  1. Squeeze the juice from the lemon and oranges, then set aside.
  2. Heat a large cast iron or non-stick pan with olive oil.
  3. Season both sides of the salmon with Creole seasoning or salt and pepper.
  4. Add the seasoned salmon to the pan and brown both sides for about 2-3 minutes per side.
  5. Remove the salmon and transfer it to a plate.
  6. Add garlic, onions, thyme, paprika, cumin, and cayenne pepper (if using) to the pan and sauté for about a minute.
  7. Add ¼ cup of broth and simmer for about 2 minutes.
  8. Pour in the citrus juice and honey.
  9. Whisk cornstarch with about 1 tablespoon of water or broth, then stir it into the pan and bring to a boil.
  10. Let it boil for about a minute while stirring frequently, adjusting seasonings to taste.
  11. Return the salmon to the pan and spoon the sauce over it, cooking for another minute.
  12. Serve with steamed broccoli and/or couscous.
