Instructions
- 1. Mix the seasoning ingredients in a small bowl and season the chicken on both sides.
- 2. Heat a large skillet over medium heat and add avocado oil. Cook the chicken thighs for 5-6 minutes on each side until cooked through, then set aside.
- 3. While the chicken cooks, prepare the cauliflower rice using a food processor or grater.
- 4. In the same skillet, add the cauliflower rice, salsa, hot sauce, and cilantro. Cook for 2-3 minutes until softened.
- 5. Squeeze lime juice into the cauliflower rice and stir to combine.
- 6. Nestle the cooked chicken back into the skillet with the cauliflower rice and simmer for another 2-3 minutes before serving.
