Spicy Chicken and Cauliflower Rice

Ingredients

The seasoning

  • 2 tsp chili powder
  • 1 tsp cumin
  • ½ tsp sea salt
  • ½ tsp ground pepper
  • ¼ tsp cayenne pepper

The chicken

  • 1 tbsp avocado oil
  • 1.5 lbs boneless chicken thighs

The rest

  • 6 cups cauliflower rice
  • ½ cup salsa
  • 2 tbsp hot sauce
  • ¼ cup cilantro, chopped
  • 1 unit lime, juice of

Instructions

  1. 1. Mix the seasoning ingredients in a small bowl and season the chicken on both sides.
  2. 2. Heat a large skillet over medium heat and add avocado oil. Cook the chicken thighs for 5-6 minutes on each side until cooked through, then set aside.
  3. 3. While the chicken cooks, prepare the cauliflower rice using a food processor or grater.
  4. 4. In the same skillet, add the cauliflower rice, salsa, hot sauce, and cilantro. Cook for 2-3 minutes until softened.
  5. 5. Squeeze lime juice into the cauliflower rice and stir to combine.
  6. 6. Nestle the cooked chicken back into the skillet with the cauliflower rice and simmer for another 2-3 minutes before serving.
