Spicy Cauliflower with Sesame

Ingredients

The base

  • tablespoons extra-virgin olive oil or clarified butter
  • 1 teaspoon cumin seeds
  • 2 medium yellow onions, finely sliced
  • a pinch turmeric
  • to taste fine grain sea salt

The main ingredients

  • 1 medium cauliflower, thinly sliced (about 12 oz)
  • 4 dried red chiles, stemmed and halved
  • 1-2 teaspoons sesame seeds, lightly toasted
  • 1 clove garlic, grated
  • 4 cm fresh ginger, peeled and finely grated (about 1½ inches)
  • 1-2 green jalapeno chiles, seeds removed and finely chopped
  • 2-3 tablespoons chopped fresh cilantro/coriander

Instructions

  1. Heat the oil in a large skillet over medium-high heat and add the cumin seeds, cooking until they crackle.
  2. Stir in the onions with turmeric and salt, cooking until the onions caramelize and turn golden, about 7-10 minutes.
  3. Add the red chiles, sesame seeds, garlic, and half of the ginger, cooking for another minute.
  4. Stir in the cauliflower, cover the pan, and cook over low-medium heat for 3-5 minutes until tender.
  5. Remove the lid, increase the heat, and add the green chiles and remaining ginger, seasoning with salt and sprinkling with cilantro before serving.
