Spicy Cauliflower with Sesame

The main ingredients

cauliflower, thinly sliced (about 12 oz)

red chiles, stemmed and halved

sesame seeds, lightly toasted

fresh ginger, peeled and finely grated (about 1½ inches)

jalapeno chiles, seeds removed and finely chopped

chopped fresh cilantro/coriander
Instructions
- Heat the oil in a large skillet over medium-high heat and add the cumin seeds, cooking until they crackle.
- Stir in the onions with turmeric and salt, cooking until the onions caramelize and turn golden, about 7-10 minutes.
- Add the red chiles, sesame seeds, garlic, and half of the ginger, cooking for another minute.
- Stir in the cauliflower, cover the pan, and cook over low-medium heat for 3-5 minutes until tender.
- Remove the lid, increase the heat, and add the green chiles and remaining ginger, seasoning with salt and sprinkling with cilantro before serving.
