Sticky Sesame Cauliflower

Ingredients

The cauliflower

  • 4 cups cauliflower florets
  • ¼ cup scallions, chopped (the white part only)
  • 2 cloves garlic, minced

The sauce

  • cup soy sauce or tamari (for gluten free)
  • 4 tbsp brown sugar
  • 1 tbsp rice vinegar
  • 2 tbsp cornstarch
  • 3 tbsp vegetable oil
  • to taste sesame seeds

Instructions

  1. Heat the oil in a large pan over medium heat and add the scallions, cooking until soft.
  2. Add the minced garlic and cauliflower florets to the pan, cooking until the cauliflower is fork tender.
  3. While the cauliflower cooks, whisk together the soy sauce, brown sugar, rice vinegar, and cornstarch in a small bowl until smooth.
  4. Pour the sauce over the cauliflower mixture and stir constantly until the sauce thickens and caramelizes.
  5. Remove from heat and finish with sesame seeds before serving.
