Sriracha Ramen

Ingredients

The broth and noodles

  • 4 cups chicken broth
  • 2 packs instant ramen

The toppings

  • 2 large eggs
  • 4 oz shrimp, peeled and deveined
  • 4 oz white mushrooms, sliced into halves
  • 2-3 tablespoons sriracha
  • 1 teaspoon sesame oil
  • 2 tablespoons chopped scallion
  • 1 tablespoon lime juice (optional)
  • to taste salt

Instructions

  1. Boil the eggs in a pot of cold water for 6 minutes, then cool, peel, and slice them.
  2. In a pot, bring the chicken broth to a boil.
  3. Add the ramen noodles to the boiling broth and cook according to package instructions.
  4. When the noodles are halfway done, add the shrimp, mushrooms, sriracha, and sesame oil.
  5. Stir in the eggs, scallions, salt, and lime juice, then serve immediately.
