Ingredients

The marinade

  • ½ unit yellow onion (roughly chopped)
  • 4 units scallions (white and green parts)
  • 2 units habanero peppers (seeds and stems removed)
  • 3 cloves garlic (minced)
  • 1 tablespoon fresh ginger (minced)
  • 2 teaspoons allspice (ground)
  • teaspoons pepper
  • teaspoons salt
  • teaspoons thyme (dried)
  • ¼ cup olive oil
  • ¼ cup apple cider vinegar
  • 1 unit orange (juiced)
  • 1 unit lime (juiced)

The chicken

  • pounds chicken (bone-in, cut into parts, skin on)

Instructions

  1. Blend all marinade ingredients except the chicken until smooth.
  2. Marinate the chicken in a shallow bowl or baking dish, ensuring the marinade gets under the skin, and refrigerate for a few hours or overnight.
  3. Prepare a charcoal fire and grill the chicken, flipping once, until it reaches an internal temperature of 165°F, about 12-15 minutes per side.
